While the uninformed general public automatically equates Valpolicella with cheap, industrial pizza parlor house carafes or thick, heavily sweet dried grape styles, the inner circle looks to the soaring limestone hills of Marano. Run with organic devotion by the fourth generation Castellani family, Ca' La Bionda refuses to use oak tricks or sweet concentrates. In a challenging, heavily rain shortened vintage, they made an incredibly smart, high society move, sacrificing part of their luxury Amarone production to channel that premium, elite estate juice right into this Classico entry. The result is a jaw droppingly pure, energetic red that acts as the ultimate gastro weapon.

- The Taste: A bright, light ruby red pour flashing violet reflections in the glass. The bouquet is beautifully perfume driven and instantly charming, leaping out with a juicy explosion of wild strawberries, fresh red cherries, and blueberries, woven with elegant top notes of rose petals, violets, and sweet wild herbs. The palate is beautifully sleek, weightless, and agile, matching a succulent core of tart red fruits against an electric spine of acidity, a whisper of chalky minerality, and fine, powdery tannins that finish clean as a whistle.

Harvested from ancient, 25 to 80year old high trained pergola vines dug deep into fossils rich clay limestone soils, the fruit is moved entirely via gravity. It undergoes a spontaneous wild-yeast fermentation in steel tanks for 7 days with minimal sulfur before resting for 5 months in stainless steel to protect its unadulterated varietal crunch.
