The Allure
Imagine sitting at a breezy terrace cafe in Northern Italy, watching the world pass by as sunlight dances through a glass of delicate pink bubbles. Founded in 1997, Col de’ Salici established itself with a clear, uncompromising mission: to create upmarket Italian sparkling wines from the region's finest slopes. This delightful Rosé Spumante captures that glamorous Venetian spirit in every sip, offering a sophisticated, fully sparkling alternative to standard Prosecco that feels both timelessly chic and refreshingly fun.
Why It’s Exceptional
The Taste: Displays a charming pastel pink colour in the glass. The bouquet opens with delicate aromas of summer red fruits and ripe pears. On the palate, a fine and gentle sparkle lifts a refreshing core of juicy red cherries, striking a lovely, balanced harmony that glides effortlessly across the tongue.
The Pedigree: A clever blend of eighty percent Glera and twenty percent indigenous Raboso grapes, hand harvested from selected clay rich vineyards in the Piave region. The winemaking team gives the destemmed, lightly crushed grapes a cold maceration below 10°C for 12 to 24 hours to extract its soft pink hue. Following fermentation, the wine undergoes its secondary fermentation in tank to achieve its vibrant, pressure bottled sparkle.
The Ritual: An absolute party starter and a versatile pairing option for light bites. Serve well chilled in flute or tulip glasses to celebrate its lively effervescence. Its delicate red fruit character and crisp finish make it an exceptional match for prosciutto wrapped melon, smoked salmon canapés, strawberry tarts, or soft goat cheeses.
