The Allure
Luminous, beautifully balanced, and dripping with regal Hungarian history. While the uninitiated reflexively lean into heavy, syrupy dessert wines that flatten the palate, the global connoisseur travels to the ancient volcanic ridges of Tokaj. Classified as a historic First Growth since 1732, Disznókő (“the rock of the wild boar”) represents the absolute vanguard of the region's modern renaissance. This brilliant Late Harvest serves as the perfect, high society introduction to the legendary estate, shunning thick, cloying textures to deliver a vibrantly refreshing, crystalline nectar that behaves with total gastronomic weight and energy.
Why It’s Exceptional
The Taste: A striking, bright golden yellow pour with brilliant emerald flashes. The bouquet is wonderfully intense and perfumed, soaring from the glass with fresh pear, greengage plum, and dried pineapple, underscored by sophisticated layers of crème brûlée, wildflower honey, and barley sugar. The palate is beautifully juicy, velvety, and medium bodied; a concentrated sweetness is masterfully undercut by a racy, citrusy spine of acidity and an elegant flash of salinity that makes the finish incredibly long, clean, and mouth watering.
The Pedigree: Crafted predominantly from Furmint grapes grown on the spectacular, sun drenched volcanic clay slopes of the estate. In a stellar vintage shaped by a cool late summer, the fruit naturally locked in sky high acidity before a meticulous, late season hand selection on the 22nd of October and 23rd of November. Blending late harvested clusters with partially botrytised berries, the juice is full bunch pressed and naturally fermented in stainless steel before resting patiently for 8 months in traditional subterranean oak casks.
The Ritual: An incredibly versatile, adaptive showpiece that serves as a flawless bookend to a fine meal. Keep it beautifully chilled (11–13°C) to allow its electric acidity and complex, honeyed orchard fruits to truly harmonize. While it makes an exceptional, meditative standalone luxury, its precise structure makes it an elite gastronomic match for creamy fruit based desserts, rich pâté on toast, savory prosciutto, or pungent, artisanal goat's cheese.
