The Taste:
A delicate pale gold pour with an impressively fine mousse. The nose opens with baked apple, citrus and gentle spice before revealing layers of pastry, almond and honey. On the palate, it has lovely freshness and precision, balanced by a creamy texture and subtle richness. The finish is long, elegant and wonderfully moreish, leaving behind lingering notes of orchard fruit and toasted pastry.

Classic Cuvée is Nyetimber's signature multi vintage blend, bringing together Chardonnay, Pinot Noir and Pinot Meunier from its vineyards in southern England. The wine is made using the traditional method, with a second fermentation taking place in bottle before spending several years ageing on its lees. That extended time in the cellar is what gives it the depth, texture and distinctive biscuit and brioche character that set serious traditional method sparkling wine apart.
The Ritual:
Serve properly chilled and give this one a decent glass rather than hiding it in a tiny flute. It makes an obvious aperitif, but its combination of freshness and richness makes it remarkably good with food too. Think oysters, smoked salmon, scallops, sushi, asparagus or delicate canapés. And yes, it is perfectly acceptable to open it simply because you've had a very long week.
